We had pumpkins left over from Halloween. They weren't carved out or anything so, they would just rot if left alone. Well, we decided to make homemade pumpkin pie filling. I took pictures because I need to document everything new that happens, plus its my first time making it \o/ first things first! cut up your pumpkin and take out all the seeds. Those you can either roast or plant for next time!

We now have them all nice and cut up into pieces. We did three pots. One on the stove (seen above) with about 4 cups of water. This is a very tall pot btw. Add spices! I added a little bit of cinnamon and sugar, you can also add nutmeg.

while cutting up another pumpkin, we found this little surprise! A sprouting pumpkin seed ;u;! its a baby!

This is about 4 hours later, on a medium/low heat. And man oh man did the house smell like pumpkin *drool drool* These pieces had a lot of water (you can also bake the pumpkin pieces at 350*F for about 1 hour) so they will be a little water heavy and the water is HOT okay. But, once its ready, you should be able to peel away the flesh from the skin just like an avocado so a large spoon is best.
By the time everything was done with, it was really late at night, so I threw all of the pumpkin flesh (i cooked TWO pumpkins) into the fridge overnight. Now, recipes call for it to be blended and squished into a pulp but a spoon and whisk will work just fine. Elbow grease!! :DD
So, a little bit of blending later:

sadly i did not have any Cool Whip or ice cream to go with this, but a little more sugar and cinnamon and a tiny bit of milk for added sweetness, thrown in the microwave for about 45 seconds for warmth and its oh so OM NOM NOM.
